Chocolate Pumpkin Cookies
Baking is a stress outlet for me. The cozy smell of pumpkin always makes the house feel warm and safe. a pie might be a little too much, but these cookies have the amazing pumpkin pie flavor and smell with chocolate. If you want the more pure pie flavor and texture, you can always leave out the chocolate and walnuts! Enjoy!
Ingredients
- 1 cup packed light brown sugar
- ½ cup white sugar
- ¼ teaspoon Nutmeg
- ¼ teaspoon ginger
- ½ teaspoon cinnamon
- ¼ teaspoon cloves and allspice
- 2 teaspoons vanilla extract
- 1 cup canned pumpkin
- ¼ cup vegetable oil
- 1 ¼ cups all-purpose flour
- ½ teaspoon baking soda
- 1 teaspoon salt
- 3 cups quick-cooking oats
- 1 cup chopped walnuts
- 1 cup semisweet chocolate chips
- Combine 1 cup packed light brown sugar, white sugar, Nutmeg, ginger, cinnamon, cloves, and allspice, and vanilla extract
- Add vegetable oil and pumpkin
- Combine all-purpose flour, baking soda, 1 teaspoon salt, and quick-cooking oats in a separate bowl
- Combine both bowls
- Add in chopped walnuts and chocolate chips
- Place 1-2 tablespoons of batter on a greased baking pan
- Bake at 375° for 12-20 minutes or until golden brown
