Apple Cinnamon Sugar Cookies

These cookies are a delicious treat that imbibe the fall feel. I hope you enjoy!

Ingredients

  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 cup honey butter, softened
  • 1 ½ cups white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 2 teaspoon apple pie spice (or an extra tsp cinnamon)
  • 1/2 diced apple 

Optional Maple Icing

  • 1 and ½ cups Confectioners sugar
  • 2 Tablespoons of milk (Non-dairy works too!)
  • 2 Tablespoons Maple syrup or molasses

Instructions

Preheat the oven to 375 degrees. Stir flour, baking soda, baking powder, cinnamon, apple pie spice together in a medium sized bowl. Beat butter and sugar together until smooth. Add in egg and vanilla. Gradually add in flour mixture. Fold in diced apples, careful not to overmix dough. 

Chill cookie dough for thirty minutes before rolling into 2 TBS sized balls, placing onto lined cookie sheets. Bake for 9-11 minutes, until the edges are golden brown. Cool on baking sheets before icing. 

While cookies are baking, whisk all icing ingredients together in a bowl. Drizzle over cookies, and enjoy.
